HAPPY 2012 EVERYONE!

Well as always, what comes with a new year are new goals and aspirations. I am no different. I have resolutions myself but as I have gotten older, I have believed them to be more promises that are meant to be broken than an actual goal. And if you have followed my blog at all, you will know that I have a lot of unfinished business. I start things only to quit them. I do know that I fail at many things but I like to focus on what I accomplish.

So... I have been thinking about some things that I would like to accomplish this year. I don't know them all so my list will be growing throughout the year. Let's see how many I can scratch off!

Get healthy - Physically, Emotionally, Financially & Spiritually

Learn to decorate cookies with Royal Icing by 02/14/12.

Make homemade gifts or buy local.

Start & finish my craft wall.

Learn to sew with a machine and by hand.

Convert our office to the playroom.

Convert an empty spot in the basement to be our office.

Finish decorating and organizing our bedroom.

Remodel our bathroom - already in the works

Build my Scentsy team.

Surpass my Scentsy personal goals.

Finish a project I started but never finished.

Help a Family in Need

I have a very special request to ask of you my family and friends! Last week our friends, the Fontoura family, had a devastating fire that destroyed their house and all their clothing, toys and daily essentials such as toiletries were heavily damaged by the smoke. I'm asking you to come together this holiday season to help this family re-start this long and very emotional process.

As some of you know, I am closely related to a similar devastating loss, so you can imagine how important your help and support is needed!

Giddy - Product Review

Ever forget about something you were supposed to do that was important but with all the chaos it fell by the waist side? Well, this is one of them! Sorry Sally!

Months ago (almost a year now), I was given samples of the kids snack called Giddy in return for an honest review. This was my first chance at testing out a product that was being introduced to the local markets which would help spread the word on this product and unfortunately I failed. UBER FAILURE!

But I gave them my word so here I will FINALLY provide my review...

Giddy Dip 'ems Snacks

What's a "Giddy Dip 'ems"? Giddy Dip 'ems is a healthier alternative to the artificial convenient snacks that are out there in the market targeted for a child's consumption. It's made of all natural ingredients making it the wholesome snack that parents crave for their child. The best part is that they are pretty simple snacks. They are whole grain biscuits that you dip into fruit... REAL fruit!

Here's a few things you should know about the Giddy snacks:

NO high fructose corn syrup
All natural ingredients
NO artificial flavors, colors or preservatives
Biscuits are baked with whole grains
Fruit dip is made of REAL fruit

Now, since this is an actual review, I will provide you, my reader, a fair and honest review.

Let me first start off by saying that when I was given a sample of the product, it was when it was being introduced into the market. I sampled the product, as well as, provided samples to local children and parents to get their opinions of the product. I then provided my reviews to Sally herself, which her and her company took seriously and made some adjustments to the product based on reviews. A company that listened to their customers? Yes, they do exist!! As of yet, I have not tasted the updated versions so my review is based on the original product. Does this null and void my review? Maybe but you should know anyway.

So my grade for the ORIGINAL Giddy Dip 'ems was a B+. Both Saya baby and I loved the biscuits. I thought they were really yummy and quite sturdy as they stood up to my then 6 - 8 month old teething baby. The snack is intended for children 3+ years but when Saya was eating these snacks, she was under full supervision as I imagine that it can be a choking hazard for smaller children. Not only did they taste great they were cute in size and perfect for the little hands to grip and dip. In fact, many of the children that taste tested this product liked the biscuits because they tasted like cookies! SCORE!! A health food that taste like yummy cookies!!

Now for the fruit dip. This honestly got mixed reviews which obviously depends on people's taste preferences. I personally thought it tasted like jelly and wasn't bad but wasn't great either. The flavors were on point though. The grape tasted like grape and the sour apple was indeed sour. My only complaint was that the fruit syrup was too thin. I was told, however, that the consistency of the fruit syrup was changed in version dip 'ems part II. Anyway, as I mentioned it received mixed reviews. My sister drank the tropical flavor because she loved it so much while some kids liked it but didn't love it.

Having said all this, I would definitely buy this as a snack for Saya baby! She couldn't get enough of the biscuits and that is enough for me. A natural snack that my child enjoys, is a winner in my book. Hopefully yours too!

Life without power...

We always ask the question, what would it be like if we didn't have this or that. Well this weekend my family and I are experiencing days without power.

It wouldn't be so bad if we were experiencing true fall weather. Unfortunately, we had at least 6 inches of heavy snow that seems to have taken down trees almost on every block in this area. The temp is down as well. When we stopped in our house to grab a few things, our house was at a chilly 51 degrees. We even attended a birthday party where we all were wearing jackets to stay warm inside the house.

I'm trying not to complain too much as we are lucky that my parents had power all weekend so we didn't have to experience the cold unlike some unfortunate families. The local hotels are booked and apparently it could be this way until the end of the week. I just want to go home.

We know we can blame this on mother nature but our block has been having electric problems for some time now. We have lost power almost 10x in the last year. Sunny, no wind? Power outage. Rainy? Power outage. Hurricane? Power outage. Snow? Power outage. It is just insane. Technically, this is our 2nd outage of the week. Let's just say we are not pleased, I think we have every right at this point.

But I will end my complaints here. I do ask though that you keep my family and all those affected by this same outage in your thoughts!

Family. Everybody has one. Big or small, they can make a huge impact on your life. Besides the Lord, my family is my #1. They are my support system, my rock and shoulder, so without them I am nothing.

A year ago, we lost two members of our family, my uncle Tony and cousin Lou. It was sudden and largely unexpected. Their passings were huge hits to my Father's family because that side of my family is really close. That kind of closeness is something that I have craved for my Mom's side of the family. Granted, we are closer than we used to be but we need a lot more work. Both sides of my families have to make a better effort to spend time with each other and not just at parties, weddings and funerals, myself included. But I will stop here because this post isn't to talk about that.

I wanted to write about the fact that before the passing of my uncle and cousin, it had been years (or decades) since our family had lost a large player in the family. Unfortunately, what comes with time is aging. My surviving grandparents are 75 (maternal g'ma) and 86 (paternal g'pa) and their health is declining. My parents, aunts, uncles and even cousins are getting older and are only going to get older. I am not ready to lose any one of them at this point even though this reality is much closer than ever.

So I wanted to take this time and say that I LOVE you family! For all those that I don't get to speak, see, or even those I have never met, don't think I have forgotten about you. I LOVE you too! I appreciate each and every one of you and are thankful to have you all in my life! God Bless you all!

Recipe: Taco Seasoning

My family LOVES enchiladas, tacos, tostadas and pretty much anything else Mexican so I make either one of these dishes almost weekly. Prior to yesterday, I have to admit that I would use the packet taco seasoning to season my ground beef. I know, I know! The amount of sodium could probably kill a cow but I never knew how easy it was to make my own seasoning. That is until I did some Google searching.

I found the recipe below on AllRecipes.com and tried it for my beef tostadas that I made for dinner yesterday. This recipe is perfect! The right amount of seasoning and the flavors blended so well. I think it tasted better than the packet seasoning! Of course, depending on the heat that you or your family can tolerate, you can make some adjustments. As you can see below, I made some minor adjustments because of what spices I had in my pantry and you can do the same.

Try it out!

Taco Seasoning

Prep Time: ~2 mins | Yields 1 oz

Adapted from AllRecipes.com

Ingredients

1 Tbsp Chili Powder

1 ½ tsp Ground Cumin

1 tsp Kosher Salt*

1 tsp Black Pepper

¼ tsp Garlic Powder

¼ tsp Onion Powder

¼ tsp Cayenne Pepper (ground red pepper)*

¼ tsp Dried Oregano

½ tsp Paprika

Directions:

1. Combine all spices in small bowl and stir until mixed.

2. Reserve in an air tight container.

*The original recipe uses Sea Salt and Crushed Red Pepper Flakes which I did not have in my pantry to I substituted with the above starred ingredients.

There is no perfect time to make changes and explore new adventures like the present time. For a while, I was trying to come up with something that I can do that I will enjoy to get me out of my rut and last week, I found it!

One week ago, I made the decision to become an Independent Scentsy Consultant! So far, I have not regretted the decision and it is highly unlikely that I will ever regret it. This was definitely different for me. I have extreme issues with standing in front of people (no matter who they are) and giving a presentation style speech. I get all red, hot and I become weak. One time I was so weak I couldn't even open up a door. So as you can imagine, being an ISC would be a step forward for me out of the comfy little box I have been living in all my life. Luckily for me, the products do "sell" themselves and will not always require a presentation but at least I will get some practice in.

The funny part about all this is that I have NEVER heard about Scentsy until I booked my first party over a month ago. Even more, I didn't know how popular they were (especially in this area) until all my guests raved about them. Once I got to try them out, I knew exactly what they were talking about. The hubby loved them too, believe it or not!

If I were to get pregnant again I would be excited and very nervous as well.

If I could have any job in the world I'd be a pastry chef.

If I had a day to myself I would get my hair and nails done then do a bit of shopping.

If I could get married all over again I would have eloped

If I could live anywhere in the US I would stay where I am. I do love Pennsyltucky. Sure it has its quirks but it really is close to it all when you need to get away. Weather isn't too bad either.

If Saya were a boy she would have been named ???. We will keep the name private until the gender is revealed. I promise I would share if baby #2 is a boy.

If I could have any talent in the world I would like to be able to make clothing. It is so hard to find clothing that fits my shape. Making my own would be awesome!

If you met me in real life I think you'd find me to be shy, then talkative and friendly.

If I could go back to school and get a different degree I would major in Culinary Arts with concentration in pastries/desserts

If money were not an object we'd be debt free, live comfortably and make sure my family does too and lastly open up our own business immediately.

If I could meet one celebrity I think I would want to meet Beyonce. Love her music, style and attitude!

If I could only shop at one store for the rest of my life it'd be Target. They have a little bit of everything at a decent quality too.

If we get another pet I would want a cat. Never had a cat but they are more independent which would work for us. Still love our Buddy!

If I could go on a trip, RIGHT NOW, I'd want to go to, believe it or not, Disney World. I LOVE that place and haven't gone in a decade. Miss it. Brings out the kid in me.

If I had to chose between a house cleaner and a personal chef, I'd pick the house cleaner too. I do love to cook and bake but I hate to clean.

If I had the option of plastic surgery I'd get a boob lift and tummy tuck. Babies really are great but man do they do some damage :).

Nicknames...I'll tell you mine if you tell me yours :)

What are your nicknames?

Some how in my short 29 years of life, I have been given many nicknames. All were given to me by either a close friend or family member and have had the sticking power of crazy glue. So while I share you mine, I'd hope you would reveal yours :)

Below are the most current names I have been called:

Gigi {Gee-gee}
This is my actual nickname. It was given to me by my loving parents probably around birth. To this day, those who knew me from birth to high school still call me Gigi. It's funny because I find it awkward when someone I met later in life (including the hubs) calls me this. It seems unnatural :)

Gigiboo {Gee-Gee-Boo}
You should feel absolutely special that I am revealing this to you! :) This is a nickname that my Mom gave me and ONLY my Mom calls me it. Some friends (mostly the hub's), will joke around and call me this but I'd rather not be called by it. It's not that it is embarrassing, it's just weird, hence why I prefer only my Mom to use it. It's her little "pet" name for me. Hi Mom! :)

G {Gee}
Another commonly used nickname BUT this one was given to me later in my life. From college on, people have decided to shorten my name and I am OK with it. Kind of sounds cool and more grown up then "Gigi". Usually I am greeted, "Yo G!". I think it's super fly! lol

G$ {Gee money}
Ah, G$! My friend Tracy (a.k.a. T~Dawg) gave me this moniker back when we first met while working at the job I am at now. <3 her to death! She is my sista from another mista :)

Gia {Gee-ah}
There is only one person who calls me this and it is my dear friend, Dani. She was my "across the sidewalk" neighbor back when I resided in Frazier. We definitely had good times, it's just too bad we live so far away.

The Earthquake felt around the...East Coast?

I'm pretty sure by now, you heard that parts of the East Coast had experienced an earthquake a couple of days ago. For some like me, this was our very 1st earthquake that we can remember. There were reports of people as far north as Toronto, Canada and as far south as North Carolina feeling this tremor. I have to say it was one weird experience for me. One thing for sure, most of us will probably remember what we were doing at the time of the earthquake.

I was at work (as most were) typing an email when all of a sudden my hands were shaking and I felt very nauseous. I really thought I was going to faint. What brought me back to reality was when my boss came out his cube asking if I felt the shaking. Whew! I was so thankful for that. Even though it might have been all of 10 seconds, it felt to be at least a minute long. The building was moving which was scaring everyone since this building is very old. In fact, many buildings in PA are very old. Other co-workers of mine thought the building was coming down before they heard it was an earthquake, so they ran out the door as fast as they could.

Who knew living in PA was so exciting :)

So the purpose of this post is to make sure you are educated on what to do in the event we were to experience another earthquake. This information was shared to me by our HR director here at work.

Please get yourself educated! Running around screaming and crying won't protect you or your loved ones!

Earthquake Safety:

Get under a sturdy table or desk and hold on to it.
If you're not near a table or desk, cover your face and head with your arms; and
stand or crouch in a strongly supported doorway OR . . .
Brace yourself in an inside corner of the house or building.
Stay clear of windows or glass that could shatter or objects that could fall on you.
Remember - during and immediately after an earthquake : If inside, stay inside. Many people are injured at entrances of buildings by falling debris.

Located on Fayette, the main street of Conshohocken (say that 5 times), this Taqueria may be small but their food is HUGE on flavor. This is real authentic Mexican food. And when I say "authentic", I mean authentic! They use only corn tortillas for their taco shells and you won't find cheese, lettuce and tomatoes on these tacos and if you want it, you can have it but you'll pay extra for it.

The portion size is perfect for the prices and the prices are very affordable especially for Conshy where prices can be jacked up a bit for the basic sandwich. El Limon is the place where my friend / co-worker and I get our Mexican "fix". We don't get to eat there often but when we do, we leave completely satisfied and can't wait for the next time. Lucky for us we are only a few blocks away!

The owners are great too! Always smiling and very welcoming even when they are busy. If you plan on going for lunch your best bet is to go around 11:30 am before the crowd starts working it's way in. They have limited seating and they fill up fast so you want to try to go outside common eating hours. They are open until 3am on Friday and Saturday nights, so stop on by after a night out on the town.

The only negative thing I personally can comment about is that the last time I checked, there was a $15 minimum for using credit cards. This probably won't mean much to most people but I am someone that doesn't ever carry cash with me for fear of losing it so I rely on the plastic.

My favorite dish(es):
Tacos (Pollo, Asada, Carnitas) -- $2.50/taco and worth every penny!
Burrito (Asada w/ Mole, Pollo with Tomatillo) -- It's HUGE, be prepared for a feast!
Torta Milanesa -- Everything is so fresh and oh so yummy!

So if you happen to visit the Ikea store in Plymouth Meeting, you're only a few streets away. Come into Conshy for a real treat for your tummy, one your wallet will be happy about too!

Truth is... Married life is not a constant high!

Those words whether you like to believe it or not is the absolute truth. As in anything in life, marriage is not all lollipops and rainbows but oh I how I wish that was true :)

I want to share with you a snippet of a post from a fellow blogger, Jessica from Marriage to Motherhood. It really put things into perspective for me, especially with some of the feelings I have had lately. Now, when you read it you may say..."duh, who didn't know that?" but sometimes you need to be reminded about what is realistic in life AND love.

When you found the one who you confidently believe was purposed to be your mate for life - and then you enter into marriage and begin your life together....there is so much excitement in that, isn't there? Being married to a partner who you adore, and who adores you, is a beautiful thing. You anticipate filling your years with an abundant amount of happiness, great times, special moments, and unforgettable memories to cherish. Together you enjoy date nights, vacations, birthdays, holidays, celebrating life-changing milestones {a new home, a child, etc.} and then every year when your anniversary rolls around, you are reminded of your love for eachother, which has only continued to grow more and more as the years go on.

Sounds nice doesn't it?

But that's only a part of what married life is, and what it brings.
Married life is also a partnership in which sacrafices must be made, compromises must occur, quarrels will inevidatebly happen, and miscommunication will be had. Some days you may even feel under-appreciated, and sometimes the passion goes missing. Sometimes you will struggle, sometimes you will cry in frusteration and sometimes you will lay in bed wondering what will change or what will always stay the same.

You can still enjoy being married and still feel any of the above emotions at the same time. What that means is....

Married life is not a constant high.

That's right! Musikfest 2011 will be here starting this Friday, August 5th!

I probably write about the coming of this event yearly but it's because it really is a big thing here in the Lehigh Valley. It seems like a large part of Bethlehem shuts down for it. It is one of the most popular festivals in the area. There is always a wide variety music to listen to and the food... oh my! So many things to fill your tummy with!

Majority of the entertainment is free but some of the headliners you will have to purchase a ticket for. Click HERE to see the full list of headliners and purchase your tickets.

Recipe: Peanut Butter Cupcakes

These cupcakes were the biggest hit at Saya's cupcake themed 1st birthday party. Anyone who had the opportunity of trying one gave nothing but great reviews, even days later. The only bad part? I never got to hide one for myself. Darn!

Looks like the perfect excuse to make them again. Hopefully Saya isn't allergic to nuts because she will have to try these cupcakes one day too! :)

Peanut Butter Cupcakes

TOTAL: 1 - 1.5 hours | MAKES: 24 Cupcakes

Original Recipe: Becky Bakes

Ingredients

Cupcake:

1 stick (1/2 cup) of unsalted butter, softened

3/4 cup firmly packed brown sugar

1/2 cup granulated sugar

1/2 cup creamy peanut butter

4 large eggs, separated

2 cups all-purpose flour

1 tsp baking powder

1/4 tsp salt

1 cup whole milk

24 chocolate covered peanut butter cups

Frosting:

1 cup butter, softened

1 cup creamy peanut butter

1/4 cup whole milk

1 tsp vanilla extract

6 cups confectioners' sugar

Directions - Cupcake:

1. Preheat oven to 350 degrees. Line 2 12-cup muffin pans with paper liners.

2. In a large bowl, beat peanut butter, brown sugar, sugar, and butter at medium speed until fluffy. Add egg yolks, one at a time, beating well after each addition.

3. In a medium bowl, combine flour, salt, and baking powder. Gradually add to butter mixture alternating with the milk, beginning and ending with the flour, beating just until combined after each addition.

4. In a medium bowl, beat egg whites at high speed with a mixer until stiff peaks form. Gently fold beaten egg whites into butter mixture.

5. Spoon batter into prepared muffin cups, fill each 2/3's full. Place 1 chocolate covered peanut butter cup in the center of each muffin cup, pushing down until the edges of the peanut butter cup is even with the cupcake batter.

6. Bake for 15 - 20 minutes or until edges of cupcake are golden brown, let cool in pan for 10 minutes. Remove from pans and cool completely. Spread or pipe peanut butter frosting over cupcakes.

Directions - Frosting:

1. In a large bowl, beat butter and peanut butter at medium speed with a mixer until creamy. Add milk and vanilla beating until combined. Gradually add confectioners' sugar, beating until combined.

Working on ME again!

I LOVE my daughter Saya and she is and will always be my #1 priority. I also LOVE spending time with her and miss her terribly when I am away from her. I hope my message is very clear. Not trying to create any ambiguity here.

Now that I got that straightened out...

I have read time and time again that once you have a child your life will change. I have probably disagreed with that statement internally because I always associated that statement to being negative when in reality the opposite can be true. Yes, my life has changed and many changes have been for the best for which I am wholeheartedly thankful for!

This post is not about these rainbow and lollipop changes. This is about the changes in my life that haven't been positive in nature. I know you are probably thinking this is once again about my weight and you are partially right. That, I can't and won't deny but it has to be mentioned because other changes in my life have stemmed from this as well.

My main problem is that even a year later I still haven't learned to balance my life to make myself a priority as well. I feel so lost. I have taken care of everyone else BUT myself. What can I say? I am my Mother's daughter. She sacrificed herself for years for us and never took the chance to take care of herself. This is by far not a knock on my Mom whatsoever (LOVE YOU Mommy!), as this behavior was much more common back in the day than it is now. We (sibs, father and I and now my niece and nephew) were and still are her life. We have consumed every part of it not giving her time to breathe. This is exactly what is happening to me.

I've essentially let myself go in physical and mental form. I've gained weight (or more like haven't lost the baby weight) and have become hugely insecure. I've always had a low self confidence but I am at an all-time low. I've let this insecurity affect things about me that I never had issues with before. I've become less trusting of people, a little paranoid and more of an introvert than I already was. I am mean to myself and on top of that, I haven't seen my friends in forever and miss them terribly! I have become more worried what people are thinking about even if they have never met me. Now if they have known me or known of me, it makes everything worse. I am embarrassed of who I have become and I am sure it shows. It even has affected my work as I have no longer played "Superwoman" this past year. My quality of life and home life have both taken hits. I do believe that my daily life plays a big part in this mess...

Here is a little taste of my current daily life:

5am - wake-up, shower, get ready
6am to 7am - commute to work
4pm - commute home
5:30pm - pick-up Saya from daycare
6:00pm - Make dinner for family and feed Saya
7:30pm - Bath time for Saya baby
8:00pm - Saya's final play time and wind down time before bed
9:00pm - Bed time for both (still co-sleeping)

... and it repeats day after day and has for the last 5+ months.

By any chance, did any of you notice any available time for "me-time"? Yeah, me either. I "try" to squeeze in housework, maybe some dishes and laundry before bed but sometimes, Saya makes it impossible, especially when she tries to put everything and their mother in her mouth. And when it comes to bed time, the ONLY thing I can do is watch TV or read a book on my Nook once Saya is asleep. Can't even talk to the hubs since he usually doesn't get home from work until close to midnight. He's been working second shift for the last two years and sometimes I feel like I have seen him more when we were dating then now. If you knew how little we saw each other when we were dating, you would understand how rough this is because at least then we were guaranteed weekends together. Now I know this kind of schedule may work for some but this just isn't me at all.

I'm exhausted, insecure, negative, bored and lonely and I am SO ready for change! All this nonsense has taken away from me living the life I want to live (with my family of course) and since I am the only one who has control of my own happiness, I have to start now! I'm so done complaining! What I have to do is start working on ME again!

In the short-term I need to:

Get myself back in shape and healthy again for no one else but ME
Get myself on a schedule of my choosing
Have "me" time
Make time for my friends and schedule more play dates
Complete the projects I have been wanting to work on
Get myself back in physical, mental, emotional and financial shape
Set some short-term realistic goals
Be more positive again
Stop making excuses
Hold myself accountable for my short-comings
Stop being so darn lazy

Even with all of this, I do realize that these changes won't happen over night but as long as I am working on them, I can feel like I am accomplishing something.

Having said all this...I am happy to report that a few changes are already in progress. By the end of this week or latest next week, we are transitioning Saya back into her room but instead of a crib, she will have a nice and soft new mattress and a toddler bed to sleep on. This will give me some "me" time back, not to mention I will get my bed back. Call me selfish (and I don't care)... but I will also get to cuddle with my long lost hubby. Because this too is important! Parents need their alone time and bedtime should be it.

I have also started working out which I haven't done in for-ev-er! I have to remember to take it slow though. I am the kind of person that wants to do a ton of things and am determined to do them but jump too fast too soon. If I start out a little slower, I know I will actually stick with any program of my choosing.

As I work on getting back to ME again, I will document my journey because I am pretty sure I am not alone on this. For me, it is comforting to know that there are people who understand what you are going through completely. We all get broken down at some point in our life. Being able to express it truthfully is one positive step forward!

Review: Los Mariachis Mexican Restaurant, Phoenixville, PA

In addition to supplying our favorite recipes, I want to share some information on some FABULOUS restaurants or stores that are worth visiting. I am no food critic but I know what I love, so I hope you find this information useful.

First up - Los Mariachis Mexican Restaurant

When my hubby and I lived in Phoenixville, we were lucky enough to have lived about a half a block from this restaurant so we ordered from them often (but not often enough, lol). When we first went there the restaurant was quite tiny so we only ate there once. With the renovation, they now have the opportunity to have more dine-in customers.

A few things we liked about this restaurant was the fresh food, good portions, decent prices and the service. Family owned and operated, the husband and wife team were very friendly and accomodating. We felt welcomed at any time of the day or night.

The quality of the food was great and the vegetable toppings (tomatoes, lettuce, etc) were very fresh no matter when we ordered. There really is nothing like fresh toppings! With the platters comes the rice and the to-die-for refried beans. The rice is good but not the most exciting part of the platter. The refried beans are a hit! They are topped with grated parmesan cheese. OMG! I have never had this combination before but it really is a wonderful mix for your taste buds. If you choose to dine in, you get the opportunity of having their homemade tortilla chips as a starter. These were also muy delicioso.

Most of their dishes are the Tex-Mex style that us Americans have grown accustomed to. They do however, offer authentic Mexican dishes as well. No matter what you choose, you will be super satisfied. Oh and be sure to pair your dish up with one of the Spanish sodas they sell!

Recipe: Root Beer Bundt Cake

First of all, let me just say how much I LOVE the Food Network and the Food Network Magazine! Prior to this recipe, I haven't made any dishes that have been posted in the magazine usually because I don't have all the ingredients and eventually I forget about using the recipes. For some reason though, I had every single ingredient for this cake. Call it fate if you want. All I know is that this recipe was easy and delicious. Oh and my first chocolate cake from scratch! Here's to trying new things!

This picture right here is my second attempt at the cake. I made the first cake for my neighbor's 4th of July picnic, which I posted a picture on one of my Project 365 posts. The 1st attempt wasn't a fail by any stretch of my imagination, I just messed up the glaze a little. I thought the glaze was too thick so I "thinned" it out with a little more root beer. Not the best idea as the glaze then got soaked into the cake instead of laying on it as it is in the pic below. This time around, I followed the directions to a 'T'. Baking really is a science and not art. Fudge around with the ingredients and you can get a whole new dish entirely.

Well since the hubs and FIL did not get a piece of the 1st cake and again I had enough ingredients, I decided to do a second cake. Also, when I had posted the picture of the Root Beer cake I made for the 4th of July picnic, I received a few requests for the recipe. So here it is. My 1st chocolate cake and my 1st recipe post on The Roddy Bride Blog. Hope you like it!

Root Beer Bundt Cake

ACTIVE: 45 Mins | TOTAL: 2 hours | SERVES: 8 to 10 people

Original Recipe: Food Network Magazine July/August 2011 issue - Chef Claudia Sidoti (Food Network Kitchens)

Ingredients

Cake:

2 cups root beer soda, plus 1/4 cup for soaking

1 stick of unsalted butter, plus more for the pan

1 cup unsweetened cocoa powder

1/4 cup bittersweet chocolate, chopped

1 cup granulated sugar

1/2 cup dark brown sugar

3 large eggs, beaten

2 cups all purpose flour, plus more for dusting

1 1/4 tsp baking soda

1 tsp salt

1/4 tsp ground allspice

Glaze:

2 1/2 cups confectioners' sugar

1 tsp vanilla extract

Pinch of salt

Directions:

1. Preheat oven to 325 degrees. Butter and Flour a 12-cup Bundt pan; tap out the excess flour. (I used Pam for Baking)

2. Heat 2 cups of the root beer soda, the cocoa powder, chocolate and butter in a large saucepan over medium heat until the butter melts. Add the granulated sugar and brown sugar and whisk until dissolved. Remove from heat and let cool.

3. Combine the flour, the baking soda, salt and allspice in a bowl.

4. Once cooled, whisk the eggs into the root beer mixture, then gently fold in the dry ingredients. Expect the batter to be lumpy.

5. Pour the batter into the prepared pan and bake until a toothpick inserted into the cake comes out clean, 55 minutes to an hour, rotating the pan halfway through. Transfer the pan to a rack.

6. Gently poke holes all over the cake with a skewer and pour 1/4 cup root beer all over the cake; let cool in the pan for 20 minutes, then invert the cake onto a serving plate and let cool completely.

5. Meanwhile, make the glaze: Whisk the 1/4 cup root beer, a pinch of salt, the confectioners' sugar, and vanilla in a bowl until smooth. The glaze will be a little thick, this is OK. Drizzle over the cake.

Hello my Fab Followers!

If you have been following me long enough, you would know that my sister, Tanya, is in remission after having Stage 3 Hodgkins Lymphoma which she was diagnosed with last year. One thing you may not know is that one of the treatments for Lymphoma and other blood diseases such as Leukemia is a bone marrow transplant. Thankfully Tanya did not require a transplant but my cousin, Felipe, and our little friend Coco, did require a marrow transplant as part of their treatment.

Having said that, there are over 300 patients in PA alone that are in need of a marrow transplant who currently do not have a matched donor because only 70% of patients in need DO NOT have a match within their family. For the patients without a match, they turn to Be The Match registry. This is where your help is needed! If you are in relatively good health with no major diseases or disorders, you can join the registry for possible donation to a patient in need. This doesn't schedule your donation but put you on the list of potential donors. I signed up myself and I am happy that I did. To know that I can potentially help save a life is HUGE!

Their current goal is to diversify the registry. They are in desperate need of donors of a minority decent (Latino, African American, Native American, etc.). We are currently only a small set (~ 30%) of the registry population with many of the patients requiring our help.

To join the Be The Match registry, I filled out some personal information and took large q-tips given to me to swap sections of my mouth. That is it! How easy is that? If you are found to be a match then you will be able to proceed and donate your marrow at your will. The transplant may include an outpatient procedure so to make sure you are properly informed, HERE is some more information on the marrow transplant.

Please visit my team page. If you are determined to not be a qualified candidate or choose not to be on the registry, you can still help by making a donation to the registry as it takes $100 per person to be added to the registry. A donation of any amount is greatly appreciated.

Cannot donate monetarily? How about donating your time? Doing so helps bring awareness to this program and more potential donors which is even more important. As an example, you can donate your time by hosting a registry drive (think dinner parties, charity walks, church functions, family gatherings, etc.).

Project Craft Wall

Remember this poor lonely red wagon?

OK, well look at the even lonelier wall behind it. That right there is going to be my future craft space or craft wall I should say. Yippee! Can you feel my excitement? Maybe just a little? Huh? Huh?

I being a lover of arts and crafts, always dreamed of having my own little room or space to where I can put my skills to work. Once the hubs cleaned out this space in the basement, a light bulb went off! I was finally able to use my imagination and think about how to use that now empty space. Lucky for me, it didn't take any convincing for my hubs to agree with my idea. In fact, when I showed him a tiny sample of what I would like it to look like, he LOVED it! No exaggeration there. He actually used the word "LOVE", lol. It really is the most perfect spot for a craft space. I can put a nice long desk and add some shelving to store all my supplies.

The only problem? Trying to narrow down all my crazy ideas to make it an ideal spot that I will actually use. So I thought posting about this project will help me to bring my ideas together and even get some of your input when I need it. Now bear with me, I have an eclectic taste in things. I like mixing patterns and I am not afraid of color but I also love my primary colors as well. Hm...Bright and bold OR calm and muted?

So to get things started, here are a couple of pictures I found on Ikea. I am aiming for the space to be sort of a hybrid of the two.

The rest of the details are up in the air and I mean way up in the air.

As for the wall color, I am conflicted. Do I add color or make it psych-hospital white and bring out the color with the accessories, tools and supplies? Here is what I have to consider in making this decision. The craft wall is part of a large open space which is considered our basement. The room immediately to the left is my other home a.k.a. the laundry room. Eventually where the basketball backboard is at will be our shared office / work bench area and to the right of the soon-to-be craft wall is our storage. As you can see, I need to make the decision of having my wall blend in or be on its own as if it is a separate room.

Decisions...Decisions! At least I have time to make this the craft area that I want to make it.

Ah, I can't wait to get started! I'm going to start gathering more ideas. Google, here I come! :)

Confession...

I have a confession to make.

I cheated... on my "diet"!

It all started with a Black + White milk shake (bad, I know...I blame the hubby since he brought it home w/o me asking) a week and a half ago and I haven't looked back since. The worst offense was at Saya's 1st b-day. There was pizza, wings, sandwiches and cupcakes galore. I've cheated morning, noon and night. Over and over again. I even cheated this morning with an English muffin and small OJ.

Why am I telling you this you may be asking?! Good or bad, I need to be able to be truthful and provide the most accurate results. I said I would provide updates, so I can't hide this. I also wanted to show that I AM human. I too make the most stupid mistakes even when I know the outcome is no good. But I have no fear that I will make the right decisions again. In fact, yesterday I went to the store to buy a few "diet" appropriate foods. I will be starting an exercise routine as well this week.

Unfortunately, as a result of my cheating, I pretty much have to start all over. I gained back around 5 lbs (maybe more). But it ends here. I will cheat ONLY on my cheat days.

Lazboy Furniture: Whitehall, PA - Review

Now I am not at all into bashing companies so this is not what I am going to do, but I am going to provide a review of our experience with the Lazboy Furniture store in Whitehall, PA.

Let me say first that our experience should not be used against all of the Lazboy stores, since I know a few people who have had a wonderful experience with the store they went to. We decided to visit Lazboy because we were given such high recommendations for the quality of their furniture.

OK, so the store is amazing! Even I can't deny that. Many of their room set-ups are well put together, making the shopping experience quite pleasant. It also helps that their products are such beautiful pieces and very well made. Heck even the sales associate we worked with was great to talk to and worked well with us to get us the couches we desired.

Before I explain our experience, I wanted to share two things you should know about all the Lazboy Furniture stores:
1. If your furniture piece is not in stock, the item will have to be custom made which can take weeks.
2. They have a 48 hour return/refund policy.

Here is where the breakdown of the relationship occurred. We ordered our furniture the first week of March. When we ordered the pieces we were told that they were not in stock and would take 6 - 8 weeks for delivery which would have given us our furniture at the end of May. This timeline was PERFECT! We would still have a month before the first house party that we were going to hold.

As expected, the weeks had gone by. It was about the second to last week in May. So what is that, week 7? The hubs and I haven't heard a peep from our sales associate on the status of our furniture, so we decided to check in. That is when we found out there was going to be a delay in the delivery of our couches. When we question this, the first thing they said was that they called us about the delay. I have been waiting for this call, so I double checked my messages (since I was about 2 days behind). OK, yes she called BUT it was two days before we called for the status of the couches. So who cares that you called two days before we checked in. That seemed to be a bit of a problem since that should have been one of the delivery weeks. Someone obviously dropped the ball here. But that isn't the worst of it.

When we got more details on what is going on, they finally tell us that our furniture won't be delivered until mid JULY. Did you get that? They said JULY! WTFreak are we going to do for couches since the party was June 25. This was totally unacceptable and we needed an answer. Their sales excuse, "the fabric didn't meet their QA standards" (Quality Assurance for all you non-geeky readers). OK, but our next question was, "Were they making the furniture the week of the delivery?" See, this is where their return/refund policy is just plain BS. I can see if you started making the furniture that soon then of course you can't get a refund but to find out on week 7 (with one week left for delivery) that the furniture was going to be delayed because of the fabric was just soooo frustrating.

So of course, the hubs was graciously handling this situation even though he wanted to tear them to pieces. The obvious next step was to get compensated for our troubles. Yet again, another hassle. J had to speak with multiple managers to get what we deserved. Their first initial offer was to remove the shipping cost of one of the couches. Um, NO that was not going to do at all. We were going to be couch-less for this party so we needed to buy "replacement" furniture for it. In the end, they offered us a loaner couch (same design we purchased) and a discount in the price. The hubs gladly accepted. So we had a couch for the party. Not the most ideal ending as we were missing the other half but it worked out.

Want to know the funny part of it all? We got the call yesterday that the couches are now ready for delivery. A whole 2 days after the party. :\

30 By 30: Update - Week 1

Today is Day 5 of my new lifestyle change in which I battle my way to reach my goal of losing 30 pounds by the time I am 30 (which was exactly 6 months yesterday). This update will be a little lacking, as I do not have the proper tools yet to help measure my success. Once I get these tools, I will supply all the data I can including pictures (eek!).

Let's get started...Here are my beginning stats:

Weight: 184 lbs (lost 6 pounds a couple of weeks prior to starting this change)
Size: 14 bottoms and XL or L shirts

Today's stats:

Weight: 181 lbs
Size: 14 but making my way to 13
Workout: None as of yet but has tried to walk as much as I can

One thing I have to learn to do is LOVE myself. How can I show true love to other people if I cannot love myself and give myself the respect I deserve. Since this is a lifestyle change and NOT just a diet, I will be working on my self esteem as well as my physical changes.

30 By 30

I am going to start yet another project, but this time it is all about me. 30 By 30 is my goal to lose 30 lbs by the time I am 30 years old. That gives me just over 6 months to accomplish this goal. Hard? Absolutely! But I am up for the challenge. With guidance from my brother (Certified Personal Trainer), I will work my way to being healthier, slimmer, trimmer and more energetic (Saya is kicking my arse). Plus, I am looking forward to being married to my hubby again...I miss wearing my wedding and engagement rings :)

Here's a few numbers for you... 30 lbs will get me to be 5 lbs less than my pre-wedding weight, just 15 lbs more than my pre-Joshua weight (which is another goal) and only 20 lbs away from my pre-college weight (ultimate goal). Hope that didn't rattle your brain.

In order to be successful at this goal, which I believe is attainable, is to totally give into the program that I will be using. Resorting to my ways of the current and past time will keep me where I am at. Making changes really is the only way to get this done and I have finally reached that point where I am ready. I have known and come to terms that I am overweight but what I see in the mirror is not the same person I see in pictures and it is heartbreaking. The pictures show my true self and I am amazed at how much I need to work on. Sad to see it but thankful as well.

Besides my self image issues, my health is at risk every day that goes by that I am carrying this weight. I huff and puff and can't keep up with my youngin' at all and I can see it is boring her like crazy. I want to play more, run more and overall be more energetic.

To accomplish my goal, I will need to start making changes such as:

Eat more fruits and veggies
Refrain from drinks with empty calories (soda, specialty coffee drinks, smoothies, etc.)
Eat more lean proteins and good carbs
Stay away from fast food
Eat out less
Drink more water
Eat more small meals ( 6 - 7)
Exercise at least 3x a week

As I go through this program, I will document my progress and results which will include pictures. I must warn you, the beginner pictures will not be for the weak stomached but you can choose to look away. I need to see them and maybe some of you do too!

Disclaimer: I absolutely know I am contradicting my previous statements about not caring about the number but in this challenge it is kind of hard not to pay attention to it. It is only a part of the end goal, not the whole determination of my success.

Where's The Love?

This topic is something that I have been wanting to talk about for some time. It can be controversial, so I wanted to make sure that I was properly getting my point across. Are you intrigued yet? Well here goes nothing...

Making the decision to be a Stay At Home Mother (SAHM) or a Working Mom (WM). Let me start off by saying that the purpose of this post is not to show bias to one group or another or to judge anyone. In fact I was more interested in writing this post to express my disappointment. I am disappointed in us women in how we treat one another because of the decision we made. We are supposed to be empowering and providing encouragement to one another instead of knocking each other down. Women have worked too hard for so long to earn the respect of our counterparts, so lets not set us back for nonsense like this. Why are we judging each other when we have no clue about what each other's situations are?

Yes, we are all entitled to our own opinion BUT we should be sensitive to who our audience is. Why? Because it is the right thing to do, dang it! I am sick and tired of being belittled (whether intentional or not) by other people because I didn't follow the path they were able to choose. I am so damn happy you were able to do that, and I am glad it worked out in your favor but your life is NOT my life (Thank GOD!).

We all chose to be either a SAHM or WM based on what we knew was best for our family but like many things in life, there isn't a cookie cutter solution that works for all. The family dynamics of the past have changed and as humans we have to adjust in order to survive in this world. For instance, those of you that don't know me personally or my situation, I have a live-in disabled FIL. This addition to our family made us make many sacrifices (and continuing to do so, unfortunately). As a result, us having a 2-person income was a must, so I had to sacrifice the idea of being a SAHM. Do I regret it? Heck no! I know what I had to do in order to make sure my family would stay afloat. As long as I can help to provide food, clothing and shelter for my family one way or another, I'm golden!

So please, please, please... STOP THE HATE!

In fact, the next time you see a family member or friend who is a SAHM, WM or even a SAHWife, go ahead and give them a great, big hug! OK... don't do that as that can be a bit creepy BUT be sure to show them your appreciation for what they do. Something as little as this can make someone's day a little brighter.

No matter what your job title is, we are all hard working women! We work 24/7 until our children are adults themselves and even then we always get to play Mama. So a big KUDOS to all my beautiful SAHMs and WMs! Keep doing what you're doing! One thing is for sure, a mother's work is NEVER done!

Movin' On Up... To Infant Room II

Today is a big day for baby girl! OK, maybe it is more of a big day for me. Saya baby is moving to the next infant room, Infant Room II, at her daycare this morning. She had progressed nicely the last few months so she was more than ready to make the move to the next room which usually is done around their first birthday.

Her cousin, Sequoia, also made the move earlier than her 1st birthday. Since those two kiddies are so close to each other, the hubs and I believe that they "pushed" each other. When Sequoia was starting to walk, Saya was right behind her trying to do the same thing. Now, they will get that chance again since they have been separated for the last few weeks. The "new" teacher and us parents believe Saya & Sequoia are going to run that room. Watch out little babies... These girls are taken over! :)

I will say that I do know that Saya will miss her teachers, Miss Terri, Miss Tami and Miss Sue. She has grown quite fond of these women and rightfully so as she has spent the last 8 months of her life with them. Luckily, they are only a room away. One of the things that I love about this place was that teachers from the different rooms have introduced themselves to the children at some point which makes transitioning a little easier for the little ones. She also has spent a few days each week with the kids from the next room to get her acquainted on how things work.

I know this isn't kindergarten graduation or anything as big but this is another step for Mommy. My baby is growing up and I haven't been able to fully digest that idea yet. I just want her to stay a baby forever! Even last night the hubs and I were reminiscing about the little sounds and cries she used to make. There are so many of these little moments that I just cherish so much but on the other hand I do realize that there will be many more moments in the future to treasure.

So here's to what's in store for the future! Go Saya! Go!

Saya - 11 Month Update

Happy 11 Months Saya Baby!

We are almost there! Saya's 1st birthday is just 1 month away! The next month I will be in full birthday party planning mode. Let's just hope that I can get this put together without going insane :)

Age: 11 Months
Weight: 20+ lbs (TBD @ next appt. end of June)
Height: 29 in +

Milestones:

1 day before her 10 month "birthday," Saya started walking full time and she hasn't stopped since. As if she wasn't already all over the place, she is even more now. She loves to walk in between rooms from the kitchen, dining room, living room and foyer. Her walk is just so adorable. We even came up with her nickname, Saya-Zilla, because it looks like she is stomping around.
Saya's coordination is becoming more developed and stronger each day. She can lift up a ball and walk with it without falling, climb herself onto chairs or her riding toys (actually just about anything), "ride" her riding toys, tries to stack blocks, tries to strap herself into her booster seat, etc.
She is paying attention more and trying to copy-cat whomever she is around from her talking to her actions.
Saya has FINALLY said Mama! It isn't as clear as "Dada" yet but she is getting there. You have no idea how it warms my heart to hear that little girl call for me. I am getting a little teary-eyed right now.
Whatever she is saying, it seems as if she is saying it at the right time. For instance, when she sees someone, it sounds like she says "hello" or we are playing with her and we ask "again?" and it sounds like she tries to say the word "again".
Saya is talking and singing more and more. She will babble to her toys as if she is carrying a conversation with them. Daycare has been reporting the same saying that she is talking and singing a lot, as if she is telling a story.
She is eating more solid foods and less formula and also been drinking her formula out of her sippy cup throughout the day instead of the bottle. This is a requirement for when she moves to Infant Room II at her daycare, so we have been working hard on this.
Speaking of her future move to the next room. Saya has developed pretty quickly and has become a little on the dangerous side for Infant Room I as she is climbing the toys and moving furniture around (even with kids in them), so they are moving her on May 31st instead of waiting for her 1st birthday to arrive.
This really happened at least a month ago but Saya gave up her pacifier or Bobo (what we call it) on her own. One night she just didn't need it to soothe her. A month before then she was just using it as a teether.
She is recognizing people that she has seen before especially her cousin Ayden. With some people, like her other cousin Sequoia she becomes ecstatic and screams in excitement when she sees her. Them two are like 2 peas in a pod. I am so thankful that she will grow up with her.
Saya is starting to give out more kisses. They are open mouth but very cute none the less. She kind of forces them on you, lol.

Challenges:

As other children do, she puts EVERYTHING in her mouth. From fuzz to shoes, if it is on the floor or within reach, it will be in her mouth. I am definitely looking forward to the time where even a small piece of a paper towel will be safe to fall to the ground.
Saya loves doors. Any door she finds, she becomes fully interested in it and wants to open and close. This is not so great for places outside the home where you can't baby proof.
Stairs are a problem as well. She just loves to climb stairs and if you block the stairs, she will try to find other ways of climbing them. Again, how do you baby proof the baby proof?
Diaper changing is almost impossible most of the time and this too has been going on for months now. She squirms and attempts to turn when we try to put her diaper on and not to mention she screams bloody murder. We've been told to put the diaper on while she stands or sits but this is pretty hard. Guess we are going to have to learn.
No changes in the sleep department especially when she is sick. She woke up 3 times last night for food. Maybe a growth spurt? I hope so!
She still doesn't prefer to eat any earlier than 10ish. She will nibble here and there but full meals are not accepted or at least in our house they aren't. Also, if she is surrounded by people especially ones she is not too familiar with you can forgo the food all together. She won't eat well at all. Not even drink either.
Speaking of drinking. A lot of times when she takes a drink from her sippy cup, she will swish in her mouth and then immediately spit it out soaking any top she is wearing. Sure this is normal but can also be frustrating especially when she is dressed all cute.

Appearance:

Her feet are definitely growing. They grew a half size in less than a month, so she is now a 4.5 in shoes.
Her 12 month clothing fits perfectly and some 18 month clothing is starting to fit. With both sizes though, the length of things are still a little long. I am hoping she gets Papi's long legs and not my short stumpy ones.
She is still pretty pale, her hair is lightening up a little and her eyes are still blue/gray/green. No real changes there. Her hair is obviously getting longer and filling in more.

My Eyes and Ears MUST Be Deceiving Me...

Within the last 24 hours I have seen and heard some really great and exciting news.

First things first.

THEO's GYROS is coming to Bethlehem!! My Pops called me last night to let me know that he saw a sign up saying "Theo's is coming." For those of you that don't know me or my obsession with this place, this is really big news. Theo's Gyros is only in Bethlehem one time of the year during the Musikfest, so at that time I tend to eat one of their gyros a day for dinner (or try to :)). Please spare me the "that can't be good for you lecture." Last year was the only year that I couldn't make it to the fest to get one because of the extreme heat and my newborn at the time but my parents brought it to me on the last day. OMGoodness!

I stumbled upon these amazing gyros back in '98 when I was in high school and still to this date I haven't found a better gyro. Some like, Johnnie's Drive-in, have come close but still can't take that title in my opinion. So every chance I get, I try to introduce another newbie to it. My hubby was one of my victims a few years ago and he too has been in search for the better gyro and has failed. I think the funny part of it, is that I have practically grown up with one of the cooks there. I don't know his name but I have seen him every year since '98, so he knows my ever changing face so well. I just hope that this new place will not disappoint! Oh man, now I want one :|

I have even more exciting news...

I am not one to step on the scale often. It isn't a fear I have, it's just that I don't care. I think there is too much emphasis on the number when in all honesty your health is determined by many factors. Back when I was SUPER thin and in great shape, the scale still said 135 lbs, so you can imagine how the numbers can fool you. Now, let me state that I know I am overweight. This I won't deny but I am not going to stress myself out over my weight because I know when I start losing, it will be inches first and the number may or may not follow immediately.

Having said that, I decided to get on the scale, just to see where I was at. When I saw the number, I thought my eyes were deceiving me. I dropped another 3 pounds! In total, I am down 6 pounds. The funny part is that I haven't really changed much of my eating and I haven't worked out yet. It may be contributed to my nearly 2 month fasting of any soda, diet or not, and the fact that my daughter is walking around so I am chasing her more often. Plus, constantly carrying a 20+ lb. baby has to do something for me. This is exciting! Now if I can kill the last 44 pounds! Okay, did I just contradict myself? Ah, who cares! I know what I have to do, so I just have to suck it up and do it. Here's to completing this goal! I can't wait to wear my wedding rings again!

Angry Birds

Need I really say anything more? I know, I know I am so late with it but I just started playing it last week and I am already addicted. I knew what the game was as my hubby would lay in bed playing the game on his phone but never got my hands on it until my Nook Color was updated to the latest version which now accepted apps. As you can imagine, Angry Birds was the first app I downloaded and as of yet I have not regretted it.

For those who live in the dark, Angry Birds, is the #1 paid app in the US and in many other countries.

What I love about the game is that it is challenging and thought provoking. Now you can get lucky with some of your shots especially in the earlier levels but as the levels go on, you have to really think about the best spots to aim your birds in order to be as destructive as possible but also annihilate those pesky green pigs. Oh and if you are unsuccessful, those pigs will poke fun at you give you this little smirk...Grrrr! :)

I also think the characters are so darn cute. When the birds hit an object they make the funniest little noises. My hubby and I crack up all the time. I think they are so cute, I would even think about picking up the plush toys. I know my little Saya would love them...or their noses really!

Charity of the Month

This is not only related to task # 2 of my "101 in 1001" list but donating to a charity or a non-profit organization is something that I am passionate about. It is a way that I can help others even though it is of monetary nature. Prior to me knowing about this list, my hubby and I had discussed donating monthly to an organization in need. So this is my chance to do so.

The purpose of my "Charity of the Month" posts is not for me to ask you to donate (although, that would be quite generous of you) but to bring attention to these groups while providing high-level information on the charity or organization. In addition, I will give a little background as to why I chose them.

The first charity I chose is The Coco Foundation, in honor of Coco Lazaridis.

Their mission statement:

"The Coco Foundation was founded in 2010 with the goal of providing resources and support to individuals, families, and friends impacted by pediatric cancer. Furthermore, the organization seeks to achieve three primary objectives:
To help fund clinical research aimed at improved diagnosis and treatment of pediatric cancer
To raise awareness about pediatric cancers and the important role of cord blood, bone marrow, and blood product donation in cancer treatment
To provide personalized support and information for children and their families while dealing with pediatric cancer diagnosis, treatment, recovery, and related expenses
The Coco Foundation was founded by Coco’s mother, Ali Lazaridis, and a group of highly qualified board members who work tirelessly to ensure the smooth operation and success of the foundation on a daily basis. Learn more about the foundation’s Board of Directors." -- The Coco Foundation

Meet Coco:

"Coco Lazaridis was diagnosed with juvenile myelomonocytic leukemia (JMML) at age three months in November 2009. After intensive chemotherapy treatments and a successful cord blood transplant, she has been at home in remission for over seven months."

The reason I chose this charity is because little Miss Coco Lazaridis is the niece of one of my wonderful friends I had in high school. Besides my relationship with her Aunt, my family and her family have some history together. Because we all know each other, helping out this charity meant more to me and was a no brain-er. It is not an everyday where you get to meet those who will benefit greatly from a charity you donate to. I can be 100% sure that my contribution is actually going to be helping someone I personally know and all others who are affected by something as horrible as pediatric cancer.

Unfortunately, I have not had the privilege to meet Miss Coco in person as of yet. At her first annual walk, she was not well enough to attend but at the previous LLS "Light the Night" walk, my sister had the pleasure of meeting her. From afar, I can see how darn cute she was but could also see that she has fought quite the battle. Seeing her walk around was a huge blessing as just weeks before the walk she was still at the Children's Hospital of Philadelphia (CHOP) which was her home for many months of her young life. Essentially that is where she grew up. With obviously the work of the medical staff but with all the love and support of her family, friends and followers (Coco's Angels), Coco can now start to live a semi-normal kind of life and live a long and prosperous life as well.

Sign of the Week

Per task # 63, I am to learn a new sign word every week. Well as you can see, I am slacking BIG time. So today I am revealing what I will learn this week and probably a couple of extra weeks.

The reason I put this on my list is because my daughter's daycare will be teaching her how to sign as she develops. In order to better understand her and build my own skill set, I wanted to learn too. Sign language is a unique but beautiful way to communicate with others. Call me weird, but I always found it fascinating when I would watch people sign on TV as interpreters for the hearing impaired.

I am being realistic when I say that I won't be able to learn the entire language but some key words or phrases may come handy in life.
